Before arriving at Monte Rei; Jaime worked at the Ritz Carlton Artz Hotel in Barcelona, heading two of the main Restaurants in the Hotel including the fine dinning Restaurant Enoteca. There, he developed his distinctive style, introducing new Mediterranean dishes that achieved a successful combination of Catalonian, Andalusian, and Basque cuisine. |
